Apple cake

This is a cake that doubles as a pudding. I like to serve it fresh from the oven with cream or custard; the rest of the cake makes a tasty lunch, served with a mature cheddar cheese. Of course, it can also be eaten simply as a cake with a nice cup of tea!

What you need:
3oz/75g butter
6oz/175g caster sugar
Grated rind of 1 orange
8oz/225g self-raising flour
1lb/450g Bramley apples, peeled, cored and cut into cubes
2 eggs, beaten
2 tablespoons milk
1oz/25g candied peel, chopped
1 tablespoon granulated sugar

  1. Preheat oven to 350F, 180C or Gas 4. 
  2. Grease and flour a 9 inch/23 cm spring form cake tin
  3. Mix one tablespoon of the flour with the apples in a dish
  4.  Cream butter, sugar and orange rind until light and fluffy
  5. Stir beaten eggs and milk into creamed butter mixture
  6. Add remaining flour and apples to mixture, blending well with a metal spoon
  7. Turn mixture into prepared tin and sprinkle with granulated sugar
  8. Bake for 40 to 50 minutes, until golden brown
  9. Enjoy!
