Green soup

I was too busy to do any shopping this week so I had to rustle up a lunch with odds and ends from the fridge. Soup is always my answer in this kind of situation but I was hard-pressed to find anything very soupable today. However, you know what they say about necessity! I found 2 large scallions, a handful of French beans, a very tired bulb of fennel, some celery and a romaine lettuce. I melted some butter and sauteed everything except the lettuce, added some chicken stock and simmered for 5 minutes. Then I added the chopped lettuce and some seasoning and cooked for a further 5 minutes, blitzed it with the stick blender and lo, a delicious green soup. I was going to add herbs and cream but it tasted so good that I left it alone.
